French Toast Beer & Cheddar Biscuits

Ingredients:

  • 1 cup of cold butter, cubed
  • 4 cups flour, self-rising
  • 1 and 1/3 cup of buttermilk
  • 3oz French Toast Brown Ale
  • 1/3 cup of cheddar cheese
  • 1 Tbsp baking powder
  • flour for kneading

Directions:

1.) Combine self-rising flour and baking powder in a large bowl.
2.) Knead cold butter by hand into flour mixture until it becomes crumbly.
3.) In another bowl, stir buttermilk and French Toast Ale together.
4.) Mix wet and dry ingredients together until just combined, being careful not to overwork the dough.
5.) Preheat oven to 400º.
6.) Sprinkle flour onto countertop and transfer dough.
Using a rolling pin, roll dough until about 1/2" thick. 7.) Use a circle cutter to portion dough into 3-4” rounds. Roll up excess dough and recut.
8.) Butter a baking sheet and place rounds onto it.
9.) Bake for 11 minutes until biscuits become puffy and are golden on top.


French Toast Bread Pudding Recipe 

Bread Pudding Ingredients:

  • 1 and 1/2 cup French Toast Double Brown Ale
  • 1 and 1/2 cup heavy cream
  • 1 cup and 2 Tbsp dark brown sugar
  • 2 large eggs
  • 1/2 tsp ground clove
  • 1/2 tsp ground nutmeg
  • 1 and 1/2 tsp ground cinnamon
  • 1 and 1/2 tsp vanilla extract
  • 14oz loaf challah bread, cut into 1/2“ cubes
  • 1/2 cup golden raisins
  • 1/2 cup chopped walnuts

Caramel Sauce Ingredients:

  • 1 and 1/4 cup dark brown sugar
  • 1/2 cup unsalted butter
  • 1/2 cup whipping cream
  • powdered sugar for topping

Bread Pudding Directions:

1.) Preheat oven to 350°.
2.) Mix French Toast Ale, heavy cream, dark brown sugar, eggs, spices and vanilla extract in large bowl to blend.
3.) Fold in challah bread, walnuts and raisins.
4.) Transfer mixture to 11’x7’ baking dish and let stand 15 minutes before baking.
5.) Bake bread pudding for 40 minutes.
6.) Insert and remove a knife into bread pudding.
If knife comes out clean, the pudding is done.
7.) Cut a big ol’ portion and spoon over caramel sauce and top with sifted powdered sugar.

Caramel Sauce Directions:

1.) Whisk brown sugar and butter in heavy medium saucepan over medium heat until butter melts.
2.) Add cream while stirring and continue to stir until sugar dissolves and sauce is smooth and glistens slightly (3-4 minutes).
